It is the classic cheap street food of Nice, sold from stalls in the Old Town and Cours Saleya.
Eat it straight away, standing up and with your fingers, while it is still hot from the pan.

The modern tram line 2 runs from both airport terminals to the port and centre in around 30 minutes for the price of a single ticket. The cheapest and most reliable airport transfer.
Official taxis charge set approximate fares from the airport to the centre, higher in the evening and with luggage. Best for groups or heavy bags; use only the official rank and confirm the fare.
A clean, frequent tram network links the main districts, the station and the Old Town. The fastest way to move across the city; buy a rechargeable card and mind pickpockets at busy doors.
Lignes d'Azur buses reach the hills, the Cimiez museums and nearby coastal towns where the tram does not go. The same ticket and passes apply; validate on boarding.
The Old Town, seafront and main squares are compact and best explored on foot. Comfortable shoes help on the pebble beach and the climb up Castle Hill.
Late spring (April to June) and early autumn (September to October) bring warm, pleasant weather, calmer beaches and thinner crowds than the peak. July and August are hot, very busy and expensive along the coast, while winter is mild and quiet, with bright days but a cooler sea.
Two to three days is enough to explore the Old Town, walk the Promenade, climb Castle Hill and visit the Matisse and Chagall museums, with time for the beach and a day trip along the coast.
Tram line 2 is by far the cheapest and most reliable option, reaching the centre and port in about 30 minutes for the price of a single ticket. Official taxis are faster door-to-door but cost much more.
No, Nice's beaches are pebble rather than sand. Many people rent a lounger at a private beach club, but the public sections are free; bring water shoes and a cushion for comfort.
Nice is generally safe, but pickpocketing and beach bag-snatching are common in summer around the Promenade, the markets and the tram. Keep valuables secure, watch your things on the beach, and decline petitions and bracelet sellers.
You can manage with English in tourist areas, but a simple bonjour and merci go a long way and are appreciated. Greeting staff before asking a question is considered basic politeness.
