A roughly two-kilometre circuit along the top of Dubrovnik's medieval fortifications, with sweeping views over the Old Town's rooftops and the Adriatic Sea. Go early morning or just before sunset to avoid the worst of the heat and crowds.

Black Risotto (Crni Rižot)

A Dalmatian classic of rice slow-cooked in cuttlefish or squid ink until it turns a deep, glossy black, studded with tender seafood and finished with a rich, briny sea flavour. The colour alone surprises most first-time visitors, who rarely expect a savoury risotto to look almost like ink.

The black temporarily stains your teeth and lips, which is completely normal and part of the fun.

Meat, seafood or octopus slow-cooked with vegetables under a heavy bell-shaped lid buried in hot coals for hours, producing tender, smoky, melt-in-the-mouth results. It is a communal, occasion dish rather than a quick meal, and most restaurants need it ordered several hours in advance.

Beef marinated for days then slow-braised in a rich sauce of wine, prunes and spices until fork-tender, traditionally served over homemade gnocchi. It is considered one of Dalmatia's great celebration dishes, often reserved for Sundays and special occasions.

Rožata

Dubrovnik's own version of caramel custard, a silky egg-and-milk flan flavoured with rose liqueur and lemon peel, its name coming from that rose ingredient. It appears on almost every Old Town dessert menu as the classic way to finish a Dalmatian meal.

Rakija

A strong fruit brandy distilled from grapes, plums or other local fruit, often homemade and traditionally offered as a welcome shot before a meal. It is far stronger than most Western spirits and a genuinely novel drinking custom for many first-time visitors to the region.

It is polite to accept at least a small sip if offered as a welcome drink, even a token taste.

The Old Town is entirely car-free and compact enough to cross on foot in about twenty minutes, though the marble streets can be slippery when wet.

Do I need a car in Dubrovnik?

Not for the Old Town itself, which is car-free and walkable. A car, bus or organized tour is more useful for reaching nearby beaches, islands or coastal towns outside the city.

Is the City Walls walk difficult?

The full loop involves a fair number of steps and some steep sections with little shade, so it is moderately demanding rather than strenuous. Carry water and take breaks at the viewpoints along the way.
