Ayam taliwang

Lombok's most famous dish: a young chicken grilled and coated in a fiery red paste of chilli, garlic, shrimp paste, tomato and lime. It takes its name from the Karang Taliwang area near Mataram and is almost always served with plecing kangkung and rice. It is properly spicy, a point of local pride.

Order it at a busy warung around Karang Taliwang or Cakranegara for the most authentic version, and ask for it less spicy if you are unsure.

A signature Sasak side of water spinach, briefly blanched and served cool under a bright, hot sambal of Lombok chillies, shrimp paste, tomato and lime, often topped with grated coconut, beansprouts and peanuts. It is the classic partner to ayam taliwang and appears on nearly every local table.

Great as a refreshing, spicy counterpoint to grilled meats; it is usually vegetarian but the sambal typically contains shrimp paste, so ask if you avoid it.

Sate rembiga

Skewers of beef marinated in a sweet, smoky and spicy paste, sometimes tenderised with pineapple, then grilled over charcoal. Named after the Rembiga area of Mataram, it is a beloved Lombok street food, richer and hotter than the milder satays found elsewhere in Indonesia.

Look for a stall grilling to order and eat the skewers hot; a plate is often served with lontong or ketupat rice cakes.

Nasi balap puyung

A everyday plate of rice piled with shredded spicy chicken, crunchy fried soybeans, dried shredded beef or coconut and a fierce sambal, originally from the village of Puyung in central Lombok. Each element is intense on its own, and together they make a cheap, satisfying meal.

It is genuinely spicy; the well-known Puyung-branded warungs across the island are a reliable place to try the original.

A raw Sasak relish of diced aubergine and long beans tossed in a sharp tomato-and-chilli sambal with lime and shrimp paste, crunchy and fiery. It is a common fresh side served alongside grilled chicken and rice, cutting the richness with acidity and heat.

Try it with ayam taliwang for the full Sasak spread; the aubergine is usually served raw, so expect a firm, crunchy bite.

Lombok coffee

Coffee grown on the fertile volcanic slopes of Mount Rinjani, especially around Sembalun and Sapit, mostly robusta with some arabica. It is typically served as kopi tubruk, strong and unfiltered, with the grounds settling at the bottom of a sweet, black cup, a staple of Sasak hospitality.

Let the grounds settle before you sip, and look for beans from the Rinjani foothills as an easy, lightweight souvenir.

The DAMRI public bus links Lombok International Airport with Mataram and Senggigi for a low fixed fare, running through the day. Comfortable and cheap, but there is no direct route to Kuta Lombok, and services run only every hour or so.
