Manoushe

Lebanon's everyday flatbread breakfast, baked to order and most often topped with za'atar and olive oil, or with cheese or minced meat. Beirutis queue at the neighbourhood furn (bakery) each morning for one fresh off the oven, folded and eaten on the go.

Order the za'atar version with a side of fresh vegetables and mint, and eat it hot while the bread is still soft.

Kibbeh Nayyeh

Considered Lebanon's national dish, kibbeh comes in many forms; the raw version, kibbeh nayyeh, is finely minced fresh lamb or beef pounded with bulgur, onion and spices and served with olive oil and mint. Fried and baked versions are common too, and it is a centerpiece of a traditional table.

Eat the raw kibbeh only at a busy, reputable restaurant where turnover is high, scooped up with flatbread and raw onion.

Tabbouleh

A bright, herb-heavy salad that is far greener than versions abroad, built mostly from finely chopped parsley and mint with tomato, a little soaked bulgur, lemon juice and olive oil. It is a fixture of any Lebanese mezze spread and a point of national pride.

Scoop it with a leaf of romaine or cabbage as locals do, rather than eating it with a fork alone.

Hummus

A smooth purée of chickpeas, tahini, lemon and garlic, served drizzled with olive oil and eaten with warm flatbread. A staple of the mezze table, it is far creamier and more delicate at a good Beirut restaurant than most versions found abroad.

Try it as part of a mezze rather than alone, and mop it up with fresh bread instead of a spoon.

Knefeh

A warm dessert of soft, stretchy melted cheese under a crisp semolina or shredded-pastry crust, soaked in orange-blossom syrup. In Lebanon it is famously eaten for breakfast, tucked into a sesame ka'ak bread roll and served with tea.

Have it fresh and hot in the morning, in a ka'ak, for the authentic Lebanese breakfast experience.

Baklava

Layers of thin filo pastry with chopped nuts, usually pistachios or walnuts, baked crisp and soaked in sugar or orange-blossom syrup. Lebanese sweet shops sell it in an array of small shapes and it is a classic gift to bring home.

Buy a mixed box by weight from a well-known pastry shop to try several shapes and nut fillings.

Arak

Lebanon's national spirit, a strong clear anise-flavoured drink distilled from grapes, traditionally served diluted with water and ice, which turn it a milky white. It is sipped slowly alongside a long mezze meal rather than drunk quickly.

Add the water first, then the ice, never ice straight into neat arak, and drink it with food over a leisurely meal.
