A clear, tangy noodle soup that is the signature dish of Nha Trang, built on a light broth with springy fish cakes and chunks of local fish, brightened with herbs, chilli and a squeeze of lime. A close cousin, bun sua, adds crunchy jellyfish and is even more of a local specialty.

Have it for breakfast at a busy local shop where the fish cakes are made fresh; a plate of herbs and a wedge of lime on the side is meant to be piled in to taste.

Grilled seasoned pork sausage from nearby Ninh Hoa, served as skewers or patties that you wrap at the table in rice paper with fresh herbs, green banana, star fruit and crisp fried pastry, then dip in a rich, slightly sweet peanut-and-fermented sauce. It is one of Khanh Hoa's proudest dishes.

Order it as a build-your-own platter and don't skimp on the herbs and the dipping sauce, which make the dish; it is best eaten hot off the grill.

Tiny, crisp-edged pancakes of rice batter cooked in a rack of small clay moulds over charcoal, often with a quail egg, prawn or squid cracked in, then served with fish sauce, pickles and sometimes little pork balls. A cheap, moreish south-central street snack found at evening stalls.

Eat them straight from the mould while hot and crisp; a stall crowded with locals in the early evening usually has the freshest, best batch.

As a fishing port on a rich bay, Nha Trang is one of the best places in Vietnam for seafood, from grilled prawns, clams and scallops to steamed crab and prized spiny lobster, usually cooked simply to let the freshness show. Beachfront and harbour restaurants make it the centre of an evening out.

For value and honesty, pick a busy place that clearly prices seafood per kilo and confirm the weight and price of anything live before it is cooked.

Vietnam's famous baguette sandwich, a crackly-crusted airy roll filled with pate, cold cuts or grilled meat, pickled carrot and daikon, cucumber, coriander and chilli, all balanced between rich, sour, fresh and hot. It is the perfect cheap breakfast or beach-day lunch on the move.

Buy from a busy dedicated banh mi cart rather than a tourist cafe; ask for extra chilli only if you like real heat.

Strong dark-roast Vietnamese coffee slowly dripped through a metal filter over a layer of sweet condensed milk, then stirred and poured over ice. Thick, sweet and powerfully caffeinated, it is the everyday drink of the coast and a cooling ritual in the heat.

Order it and wait for the drip to finish rather than rushing; if it is too strong or sweet, ask for more ice or a little extra milk.

Khanh Hoa is Vietnam's most famous source of yen sao, the edible nests of swiftlets gathered from the province's offshore islands and prized as a delicacy and health tonic. It is served as a gently sweet warm dessert soup or sold as bottled bird's-nest drinks in every Nha Trang shop and market.

A bottled bird's-nest drink from a supermarket is an easy, affordable way to try it and makes a distinctive local gift; the restaurant dessert version is a bigger splurge.

The yellow Route 18 shuttle links Cam Ranh airport with central Nha Trang along the coast road in around an hour. By far the cheapest way in, comfortable enough, though it runs to a set timetable rather than on demand.
