A large, thin pancake of chickpea flour, olive oil and water baked in a wood-fired oven until crisp at the edges and soft in the middle, then cut up and eaten hot with black pepper. It is the classic cheap street food of Nice, sold from stalls in the Old Town and Cours Saleya.
Eat it straight away, standing up and with your fingers, while it is still hot from the pan.

The city's famous salad of tomatoes, hard-boiled egg, tuna or anchovy, black olives, spring vegetables and olive oil, traditionally made without cooked potato or green beans. A fresh, light plate that captures the flavours of the Riviera.
A traditional version stays raw and simple; treat cream or heavy dressings as a sign it is not the authentic Niçoise.

Late spring (April to June) and early autumn (September to October) bring warm, pleasant weather, calmer beaches and thinner crowds than the peak. July and August are hot, very busy and expensive along the coast, while winter is mild and quiet, with bright days but a cooler sea.

주의Pickpocketing is common on the tram, at the station and in crowded parts of the Promenade and Old Town markets. Keep bags zipped and in front, hold your phone firmly, and stay alert as tram doors open and close.
주의Bag-snatching from beaches and terraces rises in summer. Never leave valuables unattended on the pebbles while you swim, take only what you need to the beach, and keep bags against you when you rest.
주의Riviera summers can be very hot with strong sun and little shade on the seafront. Carry water, use sunscreen and a hat, and plan the beach or indoor museums for the hottest afternoon hours.
