A magnificent hilltop fort-palace of honey sandstone and marble above Maota Lake, with grand courtyards and the dazzling mirror-work of the Sheesh Mahal. Part of a UNESCO listing and Jaipur's flagship sight. Go early to beat the heat and crowds, and walk up or take a jeep rather than the controversial elephant rides.

Dal Baati Churma

Rajasthan's signature dish and a Jaipur staple: hard, round wheat baati breads baked until crisp, cracked open and doused in ghee, served with a spiced lentil dal and sweet crumbled churma made from the same dough with sugar and nuts. The salty, buttery and sweet trio is eaten together for the full effect.

Order it at a busy traditional restaurant at lunch; it is filling and rich, so come hungry and share a thali to try more dishes.

Laal Maas

A fiery red Rajasthani mutton curry that is the region's most famous meat dish, cooked with yoghurt, garlic and a generous amount of Mathania red chillies, traditionally over a wood fire. It is rich, smoky and genuinely hot, a legacy of the royal hunting kitchens of Rajasthan.

It can be very spicy; ask for a milder version if you are sensitive, and pair it with plain rice or bread to temper the heat.

Pyaaz Kachori

Jaipur's iconic breakfast and street snack: a round, deep-fried pastry with a flaky crust stuffed with a spiced fried-onion filling, served hot and often topped with tangy and sweet chutneys. Sold at sweet shops and street stalls across the old city, it is best eaten fresh from the fryer.

Have it in the morning when batches are freshest; famous shops like those in the old city draw long queues at breakfast.

Ghewar

Jaipur's most celebrated sweet, a disc of crisp, honeycomb-like batter fried in ghee and soaked in sugar syrup, often crowned with thickened milk (malai) or a layer of cream and nuts. It is especially associated with the monsoon festivals of Teej and Raksha Bandhan.

Malai ghewar is the richest version; buy it fresh from a reputable sweet shop and eat it within a day or two.

Lassi

A thick, cooling yoghurt drink whipped smooth and topped with a layer of clotted cream (malai), a beloved antidote to Jaipur's heat. The classic sweet version is served in a clay cup at old-city sweet shops, sometimes so thick it is almost eaten with a spoon.

Order the sweet malai lassi in a traditional kulhad clay cup; a single glass is surprisingly filling, so it makes a good light breakfast or afternoon break.
