Callos a la madrilena

A rich stew of beef tripe slow-cooked with chorizo, blood sausage and paprika. It is a genuine taste of old Madrid tavern cooking, and the offal base makes it a novel, adventurous order for many foreign visitors.

Look for it on the menu at old-school taverns in the centre, especially in the colder months when it is served most.

Whole suckling pig roasted until the skin shatters and the meat falls apart, a centuries-old speciality of the Castilian region around Madrid.

Sobrino de Botin, open since 1725 and recognised as the world's oldest restaurant, still roasts it in the wood-fired oven it opened with.

Deep red, marbled cured ham from free-range Iberian pigs, hand-carved into paper-thin slices that melt on the tongue. Whole legs hanging behind the bar are a common sight across the city's tapas bars.

Ask for jamon iberico de bellota, the acorn-fed grade, for the richest flavour, and expect to pay a premium for it.

Spring (April to June) and autumn (September to October) bring warm, pleasant days ideal for walking and terraces. Midsummer is very hot and many locals leave the city in August, while winter is cold but crisp and much quieter.

주의Pickpocketing is the main risk, concentrated on the Metro, around Sol and Gran Via, and in packed squares. Keep bags closed and in front, carry valuables in a front pocket, and stay alert in sudden crowds.
주의Summer afternoons regularly exceed 35C with little shade in the open squares. Carry water, seek shade or air-conditioned museums in the hottest hours, and follow the local habit of a late-evening stroll.
