Ball-shaped batter dumplings studded with diced octopus, cooked in a special molded pan until crisp outside and molten inside, then topped with savoury sauce, mayonnaise, dried bonito flakes and seaweed powder. Osaka is where takoyaki was invented in the 1930s, and stalls selling it line the streets around Dotonbori.

Let it cool for a minute before biting in; the molten centre is notorious for burning the roof of your mouth.

A thick savoury pancake of batter, shredded cabbage and a choice of meat or seafood, all mixed together before cooking on a griddle, unlike Hiroshima's layered version. It's typically cooked right at your table and topped with the same sauce, mayonnaise and bonito flakes as takoyaki.

Resist the urge to flip it too early; let the bottom set fully first for the best texture.
