Aqaba's signature dish and a fisherman's classic: fresh Red Sea fish served over rice cooked in a fragrant, deeply caramelised onion and cumin broth, topped with fried onions and toasted nuts, with a tahini or lemon sauce on the side. As Jordan's only coastal city, Aqaba is the place to eat it at its best.

Order it at a seafront restaurant that cooks to order, and ask which fish is freshest that day; it is worth the wait over a pre-made batch.

Whole fresh fish, often sultan ibrahim (red mullet), hamour (grouper) or sea bream, seasoned simply and grilled or fried, served with rice, salad, bread and tahini. Fish is usually sold by weight, so you pick your fish and it is cooked whole. It is the everyday taste of Aqaba's Red Sea.

Mansaf

Jordan's national dish and the centrepiece of any celebration: tender lamb slow-cooked in a tangy sauce of jameed (dried fermented yoghurt), served over rice and thin shrak bread and topped with almonds and pine nuts. Even on the coast it remains the dish of hospitality and special occasions.

Mansaf is a feast often reserved for Fridays and gatherings; some restaurants prepare it on request or set days, so ask ahead.

Knafeh

A hot dessert of soft white cheese under a layer of shredded or semolina pastry, baked until golden, soaked in fragrant sugar syrup and often dusted with crushed pistachio. The sweet-salty, crisp-gooey contrast makes it the star of Jordan's sweet shops, and a perfect end to a seafood dinner in Aqaba.

Arabic coffee (qahwa)

Light, cardamom-scented coffee served in small handleless cups, a symbol of Jordanian hospitality poured for guests and at gatherings. Sweet black tea with mint or sage is its everyday companion, sipped for hours in seafront cafes and souk coffee houses alike.

If someone offers you Arabic coffee, accepting a cup is a warm gesture; gently swirl the cup when you have had enough to signal you are finished.

King Hussein International sits just north of town, a 10 to 15 minute ride away. Official taxis wait outside arrivals and charge a short fixed fare; confirm the price first. The airport is small, so taxis can be scarce on late or infrequent flights.

The comfortable JETT coach links Amman with Aqaba in roughly four to five hours and is the main overland option, with a handful of daily departures. Book ahead in high season. Cheaper public buses and shared taxis also run but are slower and less predictable.

Winter is mild and sunny, making it a popular escape when the rest of the region is cold, while high summer (June to August) is very hot, with daytime temperatures that can be draining for sightseeing.
