Takoyaki

Ball-shaped batter dumplings studded with diced octopus, cooked in a special molded pan until crisp outside and molten inside, then topped with savoury sauce, mayonnaise, dried bonito flakes and seaweed powder. Osaka is where takoyaki was invented in the 1930s, and stalls selling it line the streets around Dotonbori.

Let it cool for a minute before biting in; the molten centre is notorious for burning the roof of your mouth.

Osaka-style Okonomiyaki

A thick savoury pancake of batter, shredded cabbage and a choice of meat or seafood, all mixed together before cooking on a griddle, unlike Hiroshima's layered version. It's typically cooked right at your table and topped with the same sauce, mayonnaise and bonito flakes as takoyaki.

Resist the urge to flip it too early; let the bottom set fully first for the best texture.

Kitsune Udon

Thick wheat noodles in a light, soy-based broth topped with a large piece of sweet, deep-fried tofu called aburaage, a dish said to have originated in Osaka in the early 20th century. The name means 'fox noodles', a nod to the fox spirit's mythical fondness for fried tofu.

Osaka's broth is lighter and paler than the darker versions found in eastern Japan.

Which Osaka airport should I fly into?

Kansai International Airport (KIX) handles most international flights and connects to the city by express train in under an hour. Itami Airport is closer and mainly serves domestic routes.

Is Dotonbori safe at night?

Yes, violent crime is rare, but it's the one area where bar touts operate. Avoid following anyone who approaches you on the street offering a bar or club, and you'll have no trouble.

Is tipping expected in Osaka?
