Wat Phra That Doi Suthep

The golden mountain temple that is Chiang Mai's most sacred and iconic sight, high on Doi Suthep with sweeping views over the city. Climb the 306-step naga stairway or take the small funicular, and dress modestly with shoulders and knees covered. Go early to beat the tour buses and the haze.

Wat Phra Singh

The most revered temple inside the Old City, a beautiful Lanna-style complex housing the venerated Phra Singh Buddha image. Entry is by small donation, with a modest fee for the main hall. A calm, central stop that pairs well with the surrounding temples on foot.

Wat Chedi Luang

Sunday Walking Street

Khao Soi

The signature dish of northern Thailand: soft egg noodles in a rich, mildly spiced coconut curry broth, topped with crispy fried noodles and served with chicken or beef, pickled mustard greens, shallots and lime. It reflects the Burmese and Yunnanese influences on Lanna cooking and is done better in Chiang Mai than anywhere else.

Squeeze in the lime and stir the pickled greens through before eating, and look for a busy local shop rather than a tourist restaurant for the best bowl.

Sai Ua (Northern Thai Sausage)

A grilled pork sausage packed with lemongrass, kaffir lime leaf, galangal, chili and turmeric, giving it a fragrant, herby punch quite unlike a Western sausage. It is a Chiang Mai market staple, sold in coils by weight and eaten with sticky rice.

Buy it fresh off the grill at a market stall by the coil, and pair it with a ball of sticky rice and a chili dip for the full northern snack.

A classic Lanna dip of roasted green chilies, garlic, shallots and lime pounded into a smoky, spicy paste, eaten with sticky rice, steamed vegetables and crispy pork rind. It is a cornerstone of a northern shared meal and a good window into everyday home cooking.

Scoop it up with sticky rice and raw or steamed vegetables rather than eating it alone; the heat varies, so try a little first.

Mango Sticky Rice

Ripe sweet mango served with warm glutinous rice soaked in coconut milk, Thailand's most loved dessert and widely sold across Chiang Mai's markets. It is at its best when mangoes are in season, roughly March to June.

Buy it from a dedicated dessert stall at a market for the freshest mango and the best coconut-to-rice balance.

Cha Yen (Thai Iced Tea)

The bright-orange Thai iced tea, strongly brewed black tea sweetened with sugar and condensed milk and poured over ice, sold from carts and cafes all over the city. Sweet, creamy and cooling, it is the classic drink to carry around the markets and temples.

Ask for it less sweet ('wan noi') if you find the standard version too sugary, and grab it from a busy cart for the freshest brew.

The cool, dry season from November to February is by far the best time to visit, with warm days, cool evenings and clear mountain air. March to April is the burning season, when agricultural fires blanket the valley in smoke and air quality can turn genuinely unhealthy, so it is best avoided if you can. The June-to-October rainy season is green and quiet with short, heavy downpours, and the Yi Peng and Loy Krathong lantern festivals light up the city in November.

How many days should I spend in Chiang Mai?

Three to four days lets you cover the Old City temples, a trip up to Doi Suthep, a cooking class or elephant sanctuary day, and an evening market at a relaxed pace. Add more if you want to trek, visit hill-tribe villages or day-trip to the mountains.

When is the burning season and should I avoid it?

Roughly late February to April, when agricultural fires cause heavy smoke haze and poor air quality across the valley. If you have a choice, visit between November and February instead; if you go in the burning season, monitor the air-quality index and carry a mask.

How do I choose an ethical elephant sanctuary?

Pick a genuine no-riding, no-show sanctuary focused on rescue and observation, where you feed and walk beside the elephants rather than ride them. Check recent independent reviews and avoid anywhere offering saddles, tricks or chained animals.

What is the best way to get around?

Walk inside the compact Old City, and use the cheap shared red songthaews or a Grab for anywhere further out, including the airport. Rent a scooter only if you are a confident, licensed rider.
