There are dozens of regional versions, and it is cooked and served with real ceremony rather than as an everyday plate.
Try shah plov, baked in a crisp lavash-bread casing that is dramatically cut open at the table.

The tangy yogurt sauce is essential, so spoon it generously over each parcel.

The herb-and-greens (goy) version is a great vegetarian choice; eat it fresh off the griddle.

Making them very small is a point of pride, and a warming bowl is comfort food across Baku, especially in cooler months.
Add a splash of the vinegar and dried mint on the table to lift the broth.
SweetFuad / Wikimedia Commons (CC BY-SA 3.0)The Azerbaijani take on baklava, a diamond-cut layered pastry of thin dough, ground nuts and cardamom soaked in honey or sugar syrup, often marked with a saffron-tinted lattice on top. It is especially associated with the Novruz spring festival, when it is baked in every home.
It is very sweet and rich, so a small piece with unsweetened black tea is the classic pairing.

A round-the-clock bus linking Heydar Aliyev Airport with 28 May metro station in the centre for a very low flat fare. Pay with a BakiKart or contactless card; the cheapest way into town, though slower than a taxi.
A Bolt from the airport to the centre is affordable and takes about half an hour. Order in the app to avoid the overpriced taxi touts who wait at arrivals.
A clean, cheap and fast metro on two main lines reaches many central districts and the railway station. Buy a rechargeable BakiKart, as single paper tickets are not sold.
An extensive bus network covers areas the metro misses, at the same low fare paid by BakiKart or contactless card. Useful but slower in Baku's heavy traffic.
Bolt and Uber work well across the city with fixed, low prices shown in advance. Far better value and less hassle than street taxis, which often overcharge visitors.
Late spring (April to June) and early autumn (September to October) are the most comfortable, with warm, pleasant days ideal for walking the Old City and boulevard. July and August are very hot, winter is cool, grey and windy, and Baku's famous winds can pick up in any season, so pack a light layer.
Two to three days is enough for the Old City, the main sights and the boulevard at a relaxed pace, plus a day trip to Gobustan or the fire sites of Absheron. Add more if you want to slow down or use Baku as a base to explore further.
The H1 Aeroexpress bus runs around the clock to 28 May metro station for a very low flat fare, paid by BakiKart or contactless card. A Bolt ride-hailing car is the easy alternative and still cheap, while airport taxi touts overcharge heavily.
By regional standards Baku is affordable. Cheap metro and buses, low-cost ride-hailing, tea houses and local restaurants keep daily costs down, while imported goods, upscale dining and nightlife are pricier.
For most sights you can simply pay at the door, including the Maiden Tower and Shirvanshahs' Palace. Booking ahead only helps for special exhibitions at the Heydar Aliyev Center or organised day trips in high season.
Baku is generally very safe with low levels of street crime, and visitors mostly feel comfortable walking at night. The main things to watch are taxi overcharging, dubious currency exchange and the odd padded restaurant bill, all easily avoided with apps and a little care.
