Tandoor-roasted chicken simmered in a rich, mildly spiced tomato-butter-cream gravy, invented at Delhi's Moti Mahal restaurant and now eaten worldwide. Scoop it up with naan or tandoori roti at one of the many restaurants still tracing their recipe back to the original.

Daulat ki Chaat

A winter-only Old Delhi speciality unlike any other Indian dessert: sweetened milk foam, whisked by hand overnight in the cold night air until impossibly light, then dusted with sugar and saffron. Most foreign visitors have never seen a dish quite like it, and it disappears once the weather warms up.

Look for it only between roughly November and February, mainly around Chandni Chowk.
