Mi Quang

Central Vietnam's signature turmeric-tinted rice noodles, served with just a little rich broth and topped with shrimp, pork, a quail egg, peanuts, herbs and a crisp rice cracker. It is the dish most associated with Da Nang and the surrounding Quang Nam region.

Crumble the toasted rice cracker over the top and mix everything together; look for busy local shops rather than tourist restaurants.

Banh xeo

A crisp, sizzling turmeric-and-rice-flour pancake filled with shrimp, pork and bean sprouts, torn up and wrapped in rice paper or lettuce with herbs and dipped in a sweet-savoury sauce. In Da Nang it is often eaten alongside nem lui, grilled lemongrass pork skewers.

Wrap it yourself in the greens and rice paper and dip generously; it is best eaten hot and shared.

A Da Nang breakfast favourite of springy rice vermicelli in a light, sweet-and-tangy fish broth simmered from fish bones with pineapple and vegetables, topped with slices of fried and steamed fish cake. Clean, fresh and quintessentially coastal.

Add the chilli, lime and fermented shrimp paste on the table to taste; a local bun cha ca shop is a cheap, authentic start to the day.

Ca phe sua da (iced milk coffee)

Strong, dark Vietnamese coffee dripped over sweetened condensed milk and poured over ice, a cheap daily ritual across Da Nang's cafes. Robust and very sweet, it is the perfect pick-me-up in the coastal heat.

Stir it well to mix the milk from the bottom, and try the whipped 'salt coffee' (ca phe muoi) that central Vietnam is known for.

Is Da Nang good for a beach holiday?

Yes. My Khe is a long, clean, sandy beach with warm summer swimming and many resorts. The best beach weather is roughly April to August; the wet autumn months bring rougher seas and stronger currents.

How do I get around Da Nang?
