Singapore's unofficial national dish: a whole mud crab wok-fried in a thick, sweet-spicy tomato-and-chili gravy, mopped up with fried mantou buns. Rich, messy and worth the bib.

Order it at a seafood restaurant or a hawker seafood stall and split one crab between two or three people, since it is priced by weight.

Hainanese chicken rice

Poached or roasted chicken served over rice cooked in chicken fat and stock, with chili sauce, ginger paste and dark soy on the side. Simple and fragrant, it is widely considered Singapore's national dish.

Hawker centres sell it for just a few dollars; look for the stall with the longest lunchtime queue.

Laksa

Thick rice noodles in a rich, spicy coconut-curry broth with prawns, fish cake and cockles. Katong-style laksa is famously served with the noodles pre-cut short, so the whole bowl can be eaten with a spoon alone.

The classic Nanyang breakfast: crustless toast spread with kaya (coconut-pandan jam) and cold butter, dipped into runny soft-boiled eggs seasoned with soy sauce and pepper, washed down with strong local kopi. A sweet-salty-savoury combination that surprises many first-time visitors.

Try it at a traditional kopitiam (coffee shop) rather than a mall cafe for the most authentic version and the lowest price.

Satay

Skewers of marinated chicken, beef or mutton grilled over charcoal and served with a rich peanut sauce, cucumber and rice cakes. A hawker-centre and night-market staple, especially at open-air satay stalls.

Durian

A large, spiky tropical fruit with custardy flesh and an intensely strong smell that first-time foreign visitors often find shocking. It is genuinely banned on the MRT, buses and in many hotels because of its odour, yet Singaporeans love it and stalls selling it are everywhere in season.

Buy a portion from a durian stall in Chinatown or a fruit market to try it fresh; the Mao Shan Wang variety is the most prized, and priciest.

Singapore is hot and humid all year with no real seasons, so any month works. February to April tends to be slightly drier, while the monsoon around November to January brings heavier rain. Showers are usually short, so carry a small umbrella and plan an indoor option for the afternoon.
