Bouillabaisse

Marseille's world-famous fish stew, born as a fishermen's dish and now the city's culinary signature. Several Mediterranean rock fish are simmered with saffron, fennel and tomato, then served in two courses: first the rich broth with toasted bread and garlicky rouille, then the fish and potatoes.

The real thing is expensive and often ordered a day ahead; look for restaurants that follow the Bouillabaisse Charter and avoid suspiciously cheap versions near the port.

Pastis

The anise-flavoured spirit that is Marseille's signature aperitif, poured over ice and topped with cold water until it turns cloudy yellow. Brands like Ricard and Pernod are tied to the city, and a leisurely pastis on a shaded terrace is a daily southern ritual.

Add water to taste, roughly five parts water to one of pastis, and pair it with olives and panisses; it is meant to be sipped slowly, not knocked back.

Navettes de Marseille

The city's oldest biscuit, a hard, dry, boat-shaped cookie scented with orange-flower water, said to recall a boat that carried saintly figures to Provence. Traditionally baked for Candlemas, they are sold year-round at the historic Four des Navettes near the Abbey of Saint-Victor.

They are meant to be firm and keep for weeks; dip them in coffee or tea to soften, and buy a box as an easy, authentic edible souvenir.

Panisse

Golden fritters of chickpea flour, a legacy of the city's Ligurian and Italian ties, cut into sticks or discs and fried until crisp outside and soft within. A cheap, satisfying street snack most associated with the old fishing district of l'Estaque.

Eat them hot from a paper cone with a little salt; l'Estaque's waterfront stalls, which also fry sweet chichis fregis, are the classic place to try them.

Aioli

A thick, pungent sauce of garlic pounded with olive oil, and also the name of the Provencal dish it anchors: le grand aioli, a platter of poached salt cod, boiled vegetables and eggs served with the sauce. It is a communal Friday and feast-day tradition across Marseille.

Order the full grand aioli when you see it on a menu, often a lunchtime special; it is rich and filling, so come hungry and share.

The dedicated shuttle links Marseille Provence airport with Saint-Charles station in about 30 minutes and is the cheapest airport connection. Comfortable and frequent, though it can be busy and is a known spot for pickpockets, so watch your bags.

A free airport shuttle drops you at Vitrolles-Aeroport Marseille Provence station, from where regional trains run to Saint-Charles. Good value and useful if you are continuing by rail, though it involves a connection between the shuttle and the train.

Late spring (May and June) and early autumn (September and October) bring warm, sunny days, a swimmable sea and easier access to the Calanques, with lighter crowds than midsummer. July and August are hot and very busy, and high fire risk can close parts of the Calanques, while winter is mild but windy, with the cold mistral sweeping through on clear days.
