Pav bhaji

A thick, buttery mash of mixed vegetables spiced with a special masala, served on a hot griddle with soft bread rolls fried in butter, chopped onion and a squeeze of lime. Born in the mills of Mumbai as a quick workers' meal, it is now a favourite at Chowpatty beach.

Have it at a beachside or busy local stall in the evening, and do not be shy about the generous knob of butter that makes it what it is.

Bhel puri

The city's most democratic snack: puffed rice tossed with crisp sev, chopped onion, tomato, potato, tangy tamarind and green chutneys, mixed to order so it is crunchy, sweet, sour and spicy all at once. A cousin of sev puri and other chaats sold along the seafront.

Eat it the moment it is mixed, before the puffed rice softens; Chowpatty and Marine Drive stalls are the classic spots.

A cool, vegetarian street sandwich of thin white bread layered with boiled potato, cucumber, tomato, onion, beetroot and green chutney, often griddled with butter into a 'grilled' version and finished with sev. Simple, fresh and unmistakably Mumbai.

Ask for the toasted or grilled version with extra chutney and a sprinkle of sev on top for the full effect.

A fiery Maharashtrian breakfast of sprouted-bean curry (usal) topped with crunchy farsan, chopped onion, coriander and lime, served with bread rolls to scoop up the spicy gravy. It ranges from mild to seriously hot depending on the stall.

Warn the cook if you want it milder, and mix the crunchy topping in gradually; a glass of buttermilk helps tame the heat.

A small glass of strong, sweet, milky, spiced tea, the 'cutting' being a half-measure meant to be drunk quickly on a break or shared between two. Sold at every corner tea stall for a few rupees, it is the social lubricant and everyday fuel of the city.

Taxi or rickshaw refuses the meter
