Oludeniz paragliding from Babadag

Gozleme

A thin hand-rolled flatbread cooked on a domed griddle and folded around fillings such as white cheese, spinach, minced meat or potato, then cut into pieces. In and around Fethiye it is a market and roadside staple, often griddled to order by local women at the weekly bazaars.

Buy it fresh off the griddle at a market stall; the cheese-and-spinach version is a classic, and a lemon-and-sugar one makes a sweet finish.

Pide

Often called Turkish pizza, pide is a boat-shaped flatbread baked with toppings such as cheese, spiced minced meat, sujuk sausage or egg, then sliced for sharing. It is a cheap, satisfying sit-down meal found at pide salonu bakeries all over town.

Order it fresh from the wood oven and try a kasarli (cheese) or kiymali (minced meat) pide; it is best eaten hot and shared.

Fethiye's covered fish market is a local institution: you choose fresh fish from the stalls and a surrounding restaurant grills it for a small cover charge, or you grab a balik ekmek, a grilled-fish sandwich in crusty bread with salad and onions. It is the freshest, most local way to eat by the sea.

Manti

Tiny Turkish dumplings filled with spiced minced meat, boiled and served under a blanket of garlicky yoghurt and drizzled with warm butter, chilli and dried mint. A comforting home-style dish that appears on many traditional Turkish menus in the region.

Look for handmade (el yapimi) manti at a traditional lokanta; the smaller the dumplings, the more skilled the cook.

Turkish delight (lokum)

A soft, chewy gel confection dusted with sugar or starch, flavoured with rose, lemon, pomegranate or pistachio and often studded with nuts. Fethiye's bazaars and sweet shops sell it by weight, usually with generous free tastings before you choose.

Taste before buying and compare a couple of shops; buy loose by weight rather than pre-boxed for better value and freshness.

Shared minibuses and shuttle buses link Dalaman Airport with Fethiye, around 50 km away, in roughly an hour. Much cheaper than a taxi and frequent in the summer season, though you may wait for departures and share stops with other passengers.
