The city's signature street food: thin strips of beef or calf liver stir-fried hard and fast with garlic, chilli, cumin and green pepper, then stuffed into a bread roll with tahini, pickles and extra chilli to taste. Sold from carts and tiny shops all over town, it is spicy, messy and beloved across Egypt.

Choose a busy stall with fast turnover so the liver is fresh off the pan, and say how hot you want it, as the chilli can be fierce.

Sayadeya (fisherman's fish and rice)

A fragrant coastal dish of white fish baked or fried over rice cooked with deeply caramelised onions, tomato and warm spices, sometimes with a tahini-lemon sauce. Its name comes from the Arabic for fisherman, and it is a staple of Alexandria's seafood tables.

Order it at a seafood restaurant as a change from plain grilled fish; the sweet onion-rich rice is the heart of the dish.

Feseekh (fermented grey mullet)

A pungent traditional delicacy of grey mullet salted and fermented, eaten especially at the spring Sham El Nessim festival with bread, onions and lemon. It is an acquired taste with a very strong smell, and a genuine piece of Egyptian coastal food culture rather than an everyday tourist dish.

If you try it, buy only from a trusted, reputable shop, as poorly prepared feseekh can be a real health risk.

Drink

Sobia

A cold, sweet, milky drink flavoured with coconut and sometimes rice or vanilla, poured over ice and popular on hot Alexandrian days and in Ramadan. Refreshing and filling, it is sold at juice bars and seafront stalls across the city.

Have it well chilled from a busy, clean stall; it makes a cooling break on a hot walk along the Corniche.

Alexandria has a long Italian-influenced ice-cream tradition, a legacy of the cosmopolitan communities that once filled the city, and old parlours still serve dense, chewy Egyptian-style ice cream in classic flavours. Eating a cone on the Corniche is a local summer ritual.

The intercity railway links Cairo and Alexandria in around two and a half to three hours, ending at the central Misr station. Air-conditioned Spanish and VIP services are the most comfortable; the cheaper ordinary trains are slower and busier. The most relaxed way to arrive from the capital.
