Gaeng som (Southern sour curry)

A fiery, tangy orange curry built on tamarind, turmeric and chilli, usually cooked with fish and vegetables such as green papaya, cabbage or bitter beans. Southern versions are hotter and more sour than elsewhere in Thailand, and it is a staple of everyday island cooking eaten with plenty of rice.

It is genuinely spicy and sour; pair it with plain rice and a milder dish, and ask for it less hot if you are not used to Southern Thai heat.

One of Southern Thailand's most intense dishes, a deeply pungent, powerfully spiced curry made with fermented fish innards, grilled fish and vegetables. Loved by locals, it is an acquired taste that sorts adventurous eaters from the cautious, and trying it is a real Southern food rite of passage.

Start with a small amount alongside rice; its funky, salty punch is strong, and many tourists find a milder Southern curry an easier first step.

Thailand's beloved dessert of sweet glutinous rice soaked in coconut milk, served with slices of ripe golden mango and a drizzle of salty-sweet coconut cream. It is at its best in the hot season when mangoes are perfectly ripe, and it is sold everywhere from markets to cafes.

It is best eaten fresh rather than chilled; the rice should be warm and soft, and the mango fragrant and sweet, so buy it to eat the same day.

Samui built its name on coconuts long before tourism, and they are woven through island life and cooking, from the milk in curries and desserts to chilled young coconuts sold to drink. The sweet water and soft jelly flesh of a fresh coconut are a refreshing, cheap island staple.

Buy a fresh young coconut from a market or beach vendor, confirm the price first, and ask them to open it so you can scoop out the tender flesh after drinking.

Samui International Airport sits near the north-east coast, minutes from Chaweng and Bophut. Airport taxis charge fixed island rates rather than a meter, so agree the price at the desk. Convenient with luggage but the priciest option for a short hop.

Ride-hailing from the airport ٢٥ منٹ١٠–١٨ $

Apps such as Grab and Bolt operate on Samui and often undercut the fixed airport taxi rate, with the fare set in advance. You will need mobile data or airport wifi to book and meet the driver at the designated pickup point.

If you arrive overland, car and passenger ferries cross from Donsak pier near Surat Thani to Samui's Nathon and Lipa Noi piers in around 90 minutes, usually as part of a combined bus-and-boat ticket. Slower than flying but much cheaper.

Renting a scooter is the classic way to explore Samui's beaches, temples and viewpoints at your own pace. Roads are hilly and traffic can be fast, so wear a helmet, carry a licence and ride cautiously, especially on wet or unfamiliar roads.

Grab and Bolt٤–١٥ $

Ride-hailing apps work across the island, fix the fare in advance and remove haggling, which makes them the easiest way to avoid taxi overcharging. Coverage is good in the main beach areas, though waits can be longer in remote spots.

Koh Samui has its own climate cycle, out of step with much of Thailand. The driest, sunniest months run roughly from December to April, with January and February the most settled. June to September is also largely dry and a good alternative when the Andaman coast around Phuket is wet. The island's own rainy season peaks in October and November, when the north-east monsoon brings the heaviest rain, rough seas and occasional closures of marine-park tours.
