Wiener Schnitzel

Austria's national dish: a thin veal cutlet pounded flat, breaded in a light, golden crumb that puffs away from the meat, and fried in clarified butter until crisp. It is served simply with a lemon wedge and potato salad or parsley potatoes, never a sauce. If made with pork it must be called Schnitzel Wiener Art rather than the real thing.

For the genuine article ask for veal (vom Kalb); it costs more than pork but is the authentic Wiener Schnitzel, and the crumb should be dry and crisp, not greasy.

Tafelspitz

A refined Viennese classic of beef simmered slowly in a clear, aromatic broth with root vegetables, traditionally the favourite of Emperor Franz Joseph. The tender sliced beef is served with the broth, roast or hash-brown potatoes, creamed spinach and the essential apple-horseradish and chive sauces.

It is a leisurely, old-Vienna dish best enjoyed at a classic restaurant; spoon a little of each sauce onto the beef rather than drowning it.

Vienna's most famous cake: a dense dark-chocolate sponge with a thin layer of apricot jam under a firm chocolate glaze, created in 1832 and served with a dollop of unsweetened whipped cream. The original recipe is a closely guarded secret of its hotel, and rival versions are debated with real Viennese passion.

Try it with a Melange to balance the sweetness; the unsweetened cream on the side is part of the experience, not an optional extra.

Apfelstrudel

Warm apple strudel wrapped in pastry stretched so thin you could read a letter through it, filled with spiced apples, raisins, cinnamon and buttery crumbs, a legacy of the Austro-Hungarian kitchen. It is usually served dusted with icing sugar and with cream, ice cream or vanilla sauce.

Eat it fresh and warm; some coffee houses let you watch the dough being pulled by hand, which is worth timing your visit for.

Kaiserschmarrn

The 'emperor's mess', a fluffy, caramelised pancake torn into bite-size pieces, dusted with icing sugar and served with plum or apple compote. Named for Emperor Franz Joseph, it works equally well as a rich dessert or a sweet main course.

A full portion is generous and easily shared; order it with the fruit compote on the side and eat it hot from the pan.

Wiener Melange

Vienna's signature coffee, similar to a cappuccino: a shot of coffee lengthened with hot milk and topped with milk foam, served in a cup on a little tray with a glass of water. It belongs to the city's UNESCO-listed coffee-house culture, where you can sit undisturbed for hours over a single cup.

Order a Melange rather than a generic 'coffee', and take your time; lingering over the cup with a newspaper is the whole point, not overstaying.

A juicy smoked pork sausage studded with pockets of melting cheese, a beloved late-night and on-the-go snack from Vienna's Würstelstand sausage stands. It is typically served with a bread roll, sweet or hot mustard and a squirt of ketchup, and nicknamed 'Eitrige' in local slang.

Grab one from a classic street stand such as those near the opera or Naschmarkt; ask for a Semmel (roll) and your choice of süß (sweet) or scharf (hot) mustard.

The best-value airport link. The ÖBB Railjet reaches Wien Hauptbahnhof in about 15 minutes and the S7 suburban train runs to Wien Mitte and Praterstern, both for a few euros, with a city ticket covering onward U-Bahn and tram.

City Airport Train (CAT) 16分钟US$16-17

A non-stop express to Wien Mitte in 16 minutes, comfortable but around three times the price of the ordinary train for the same time. Convenient if you value the direct run, though most travellers do fine on the cheaper Railjet or S7.

Airport taxi 30分钟US$36-55

Taxis and prebooked transfers run from the airport to the centre in around 30 minutes, useful with luggage or late at night. Prebook a fixed price or agree the fare first, as rank quotes can be high compared with the train.

Vienna's clean, frequent metro has five lines that reach most sights and run late at weekends. The fastest way across the city. Buy and validate a ticket before boarding; inspectors do check and fine fare-dodgers.

An extensive tram network circles the Ringstrasse and threads the districts, scenic and useful where the U-Bahn does not reach, with buses filling the gaps. The same tickets and passes apply across all Wiener Linien services.

Walking the centre

The old town inside the Ring is compact, flat and made for walking, with the cathedral, Hofburg and main squares all close together. Comfortable shoes and a little time are all you need to enjoy it.

Spring (April to June) and early autumn (September to October) are the most pleasant, with mild days, blooming or golden parks and lighter crowds than midsummer. July and August are warm and busy, while winter is cold and often grey but magical in December, when the Christmas markets and Advent lights fill the squares.
